Zucchini Bread
3 large eggs 2 cups sugar 1 cup vegetable oil 2 zucchini (about 3/4 pound), unpeeled, grated (about 2 cups) 1 teaspoon vanilla extract 3 cups all-purpose flour 1 teaspoon salt 1 teaspoon baking soda 1/4 teaspoon baking powder 1 tablespoon ground cinnamon 1 cup chopped walnuts Preheat oven to 350ºF In a large bowl, whisk eggs. Add sugar, oil, zucchini, and vanilla and mix well. In a medium bowl, combine flour, salt, baking soda, baking powder, and cinnamon. Add to egg Mixture and mix well. Fold in nuts. Pour into 2 lightly sprayed or oiled 4 1/2-by-8 1/2-by-2 1/2-inch loaf pans. Bake until a toothpick inserted in the center comes out clean, about one hour. Cool in pan on a rack for 10 minutes. run a knife around edges and remove bread from pans. When cool, wrap in foil and store.
